Local Flavor: Aplets & Cotlets

What are Aplets & Cotlets? Bane of children but a delight to adults, Aplets & Cotlets are a Washington state original and often feature in corporate holiday gift baskets in the area. Developed in 1918 by Armenian immigrants, they are reminiscent of Turkish delight and utilize the abundant apples grown in the region. These jelly-like confections are made from apple or apricot, studded with nuts, and coated in powdered sugar. The fruit’s own pectin is used as the gelling agent. Originally sold at roadside stands, the treats gained slightly wider popularity as a result of the 1962 World’s Fair in Seattle. According to Liberty Orchards, the sole commercial producer of the treats, there is “not a huge market” for the product outside Washington, making it a truly local treat.
